  • 1 cup Mozzarella cheese
  • 0.25 cup Parmesan cheese
  • 4 large Sub rolls
  • 0.25 cup Fresh basil

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil.

Step 2

Slice the eggplants into 1/2-inch thick rounds. Lay the slices on the baking sheet in a single layer.

Step 3

Brush both sides of the eggplant slices with 2 tablespoons of olive oil. Sprinkle them with salt, black pepper, and garlic powder.
