Ingredients

  • 1 pound Beef stew meat
  • 0.75 cup Pearl barley
  • 2 cups Carrots, chopped
  • 1 cup Celery, chopped
  • 1 large Russet potato, peeled and diced
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced
  • 1 14.5-ounce can Diced tomatoes
  • 6 cups Beef broth
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 piece Bay leaf
  • 2 tablespoons Fresh parsley, chopped (optional garnish)

Directions

Step 1

Place the beef stew meat in the bottom of your slow cooker.

Step 2

Rinse the pearl barley under running water and add it to the slow cooker.

Step 3

Add the chopped carrots, celery, diced potato, and diced onion to the slow cooker.

Step 4

Stir in the minced garlic, diced tomatoes (with liquid), and tomato paste.

Step 5

Pour in the beef broth to cover all the ingredients.

Stir in the dried thyme, dried oregano, salt, black pepper, and add the bay leaf.
