Ingredients

  • 6 whole Italian sweet peppers
  • 3 tablespoons Extra virgin olive oil
  • 3 whole Garlic cloves
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground black pepper
  • 4 leaves Fresh basil (optional)

Directions

Step 1

Rinse the Italian sweet peppers thoroughly under cool running water and pat them dry with a paper towel.

Step 2

Slice off the stems of the peppers and remove the seeds if desired. Cut the peppers into thin strips, approximately 1/2 inch wide.

Step 3

Peel the garlic cloves and slice them thinly.

Step 4

Heat the olive oil in a large nonstick skillet over medium heat until it shimmers, about 1-2 minutes.

Step 5

Add the sliced garlic to the skillet and cook for 30 seconds to 1 minute, stirring frequently, until fragrant but not browned.

Step 6

Toss in the sliced peppers and stir to coat them evenly in the garlic-infused oil.

Step 7

Sprinkle the salt and ground black pepper over the peppers, then stir well to combine.

Step 8

Reduce the heat to medium-low and cook the peppers for 10-12 minutes, stirring occasionally, until they are tender and slightly caramelized.

Step 9

If using fresh basil, tear the basil leaves into small pieces and stir them into the peppers during the final minute of cooking.

Step 10

Remove the skillet from heat and transfer the sautéed peppers to a serving dish. Serve warm as a side dish or as a topping for bread, pasta, or protein.
