Ingredients

  • 2 tablespoons olive oil
  • 12 ounces smoked sausage
  • 1 medium yellow onion
  • 1 medium green bell pepper
  • 2 celery stalks
  • 3 cloves garlic
  • 30 ounces canned red kidney beans
  • 2 cups chicken broth
  • 14.5 ounces diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 0.25 teaspoon cayenne pepper
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 cups cooked rice
  • 2 green onions
  • 0 hot sauce (optional)

Directions

Step 1

Heat olive oil in a large skillet or pot over medium heat.

Step 2

Slice the smoked sausage into 1/4-inch rounds and add it to the skillet. Cook for 5 minutes, stirring occasionally, until browned. Remove the sausage and set aside.

Step 3

Dice the onion, bell pepper, and celery, and mince the garlic. Add these vegetables to the skillet and cook for 5-7 minutes, stirring occasionally, until softened.

Step 4

Drain and rinse the kidney beans, then add them to the skillet along with the browned sausage.
