Ingredients

  • 4 medium Russet potatoes

  • 4 cups Chicken or vegetable broth
  • 2 cups Milk
  • 0.5 cup Heavy cream (optional)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup, shredded (optional for topping) Cheddar cheese
  • 2 stalks, sliced (optional for topping) Green onions
  • 4 slices, cooked and crumbled (optional for topping) Bacon

Directions

Step 1

Peel and dice the potatoes into small cubes (about 1 inch).

Step 2

In a large pot, melt the butter over medium heat. Add the diced onion and sauté for 4-5 minutes until softened and translucent.

Stir in the minced garlic and cook for another 1-2 minutes, until fragrant.
