Ingredients

  • 400 grams Spaghetti
  • 4 large Egg yolks
  • 100 grams Parmesan cheese
  • 150 grams Pancetta (or bacon)
  • 2 cloves Garlic
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1 cup of pasta water before draining the spaghetti.

Step 2

In a bowl, whisk together the egg yolks and grated Parmesan cheese until smooth. Set aside.

Step 3

Dice the pancetta (or bacon) into small cubes. Peel and crush the garlic cloves.

Step 4

In a large skillet over medium heat, add the olive oil. Once hot, add the pancetta and cook until crispy, about 4-5 minutes. Remove the garlic cloves after they infuse their flavor, approximately 2 minutes.

Step 5

Reduce the heat to low. Add the drained spaghetti to the skillet with the pancetta and toss to combine.

Quickly pour the egg yolk and Parmesan mixture over the hot spaghetti, stirring constantly to create a creamy sauce. Add a splash of reserved pasta water, one tablespoon at a time, if the sauce is too thick.
