Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef or turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 14.5 ounces diced tomatoes (canned)
  • 15 ounces kidney beans (canned), drained and rinsed
  • 15 ounces black beans (canned), drained and rinsed
  • 8 ounces tomato sauce
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup water or beef stock (optional)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the ground beef or turkey and cook until browned, breaking it into small crumbles with a wooden spoon. Drain any excess fat if needed.

Step 3

Stir in the diced onion and cook until softened, about 3-4 minutes.

Step 4

Add the minced garlic and cook for an additional minute, stirring frequently to prevent burning.

Step 5

Stir in the diced tomatoes (with their juice), kidney beans, black beans, and tomato sauce.

Step 6

Season the chili with chili powder, ground cumin, salt, and black pepper.

Step 7

If the chili looks too thick, stir in up to 1/2 cup of water or beef stock to reach your desired consistency.

Step 8

Bring the chili to a simmer, then reduce the heat to low and cover the pot. Let it simmer for about 15 minutes, stirring occasionally.

Step 9

Taste and adjust seasoning if needed before serving.

Step 10

Serve warm in bowls with your favorite toppings like shredded cheese, sour cream, chopped green onions, or crushed tortilla chips.
