Ingredients

  • 14 oz firm tofu
  • 2 tbsp olive oil
  • 1 small onion, finely chopped

  • 1 tsp cumin
  • 0.5 tsp smoked paprika
  • 0.5 tsp ground coriander
  • 2 tbsp tomato paste
  • 3 tbsp water or vegetable broth
  • 1 tbsp lime juice
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp fresh cilantro, chopped (optional)

Directions

Step 1

Drain the tofu and press it to remove excess water. Crumble the tofu into small pieces using your hands or a fork.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 2-3 minutes until softened.

Step 3

Add the minced garlic and cook for another 30 seconds until fragrant.

Step 4

Stir in the chili powder, cumin, smoked paprika, and ground coriander. Cook for 1 minute to toast the spices.

Step 5

Add the crumbled tofu to the skillet and stir well to coat with the spices.
