Ingredients

  • 3 cups Cooked shredded chicken
  • 2 cups Enchilada sauce
  • 1 cup Shredded cheddar cheese
  • 1 cup Shredded Monterey Jack cheese
  • 8 pieces Small flour or corn tortillas
  • 1 can Diced green chilies (optional)
  • 0.5 cup Sour cream (for serving)
  • 2 tablespoons Chopped fresh cilantro (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large mixing bowl, combine the shredded chicken, 1 cup of enchilada sauce, 1/2 cup of shredded cheddar cheese, 1/2 cup of shredded Monterey Jack cheese, and diced green chilies (if using). Mix well.

Spread 1/2 cup of enchilada sauce evenly over the bottom of a 9x13-inch baking dish.

Take one tortilla and spoon about 1/3 cup of the chicken mixture into the center. Roll the tortilla tightly and place it seam-side down in the prepared baking dish. Repeat with the remaining tortillas and filling.
