Ingredients

  • 3 cups Cooked shredded chicken
  • 6 cups Chicken broth
  • 1 can (10.5 oz) Cream of chicken soup
  • 1 tube (16 oz) Refrigerated biscuit dough
  • 1 cup Carrots, diced
  • 1 cup Celery, diced
  • 1 medium White or yellow onion, diced
  • 2 tablespoons Butter
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Dried thyme
  • 0.5 teaspoon Garlic powder

Directions

Step 1

In a large pot or Dutch oven, melt the butter over medium heat. Add the diced carrots, celery, and onion. Sauté for 5-7 minutes until the vegetables are softened.

Step 2

Pour in the chicken broth and stir in the cream of chicken soup until smooth. Season with salt, black pepper, dried thyme, and garlic powder. Bring the mixture to a gentle simmer.

Step 3

Add the shredded chicken to the pot and stir well. Let the mixture continue to simmer on low heat while you prepare the dumplings.

Step 4

Open the tube of refrigerated biscuit dough and separate the biscuits. Cut each biscuit into four equal pieces to create bite-sized dumplings.

Step 5

Gently drop the biscuit pieces into the simmering broth one at a time, stirring occasionally to prevent them from sticking together.

Step 6

Cover the pot with a lid and let the dumplings cook for 15-20 minutes, or until they are puffed up and cooked through. Stir occasionally to ensure even cooking.

Step 7

Taste the soup and adjust seasoning if necessary. Add more salt or pepper as desired.

Step 8

Serve hot in bowls and enjoy this comforting, hearty dish!
