Ingredients

  • 8 pieces corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 cups enchilada sauce
  • 2 tablespoons vegetable oil
  • 2 tablespoons chopped cilantro (optional, for garnish)
  • 0.5 cup sour cream (optional, for serving)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a skillet, heat the vegetable oil over medium heat. Lightly fry each corn tortilla for 10-15 seconds on each side to make them pliable. Set them aside on a paper towel-lined plate.

Step 3

Spread 1/2 cup of enchilada sauce evenly in the bottom of a 9x13-inch baking dish.

Step 4

In a bowl, mix together 1 1/2 cups of the shredded cheddar cheese and 1/2 cup of the shredded Monterey Jack cheese.

Step 5

Spoon 2-3 tablespoons of the cheese mixture into the center of a tortilla. Roll it up tightly and place it seam-side down in the prepared baking dish. Repeat with the remaining tortillas and cheese mixture.

Step 6

Pour the remaining 1 1/2 cups of enchilada sauce evenly over the rolled tortillas, ensuring they are fully covered.

Step 7

Sprinkle the remaining 1/2 cup of shredded cheddar cheese and 1/2 cup of shredded Monterey Jack cheese over the top.

Step 8

Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.

Step 9

Remove the dish from the oven and let it rest for 5 minutes. Optionally, garnish with chopped cilantro and serve with sour cream on the side.

Step 10

Enjoy your cheesy, delicious enchiladas!
