  • 1 medium yellow onion
  • 3 cloves garlic cloves

  • 2 stalks celery stalks
  • 14 ounces canned diced tomatoes
  • 4 cups vegetable broth
  • 15 ounces canned kidney beans
  • 15 ounces canned black beans
  • 15 ounces canned chickpeas
  • 1 leaf bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 cups baby spinach (optional)

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Dice the onion, mince the garlic, and chop the carrot and celery into small pieces. Add the onion, garlic, carrot, and celery to the pot and sauté for 5 minutes, until softened.

Step 3

Add the canned diced tomatoes, vegetable broth, and bay leaf to the pot. Stir to combine.
