  • 3 pounds beef chuck roast
  • 2 tablespoons olive oil

  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 cup beef broth
  • 4 carrots, peeled and cut into chunks
  • 4 potatoes, peeled and cut into chunks
  • 1 yellow onion, quartered

Directions

Step 1

Preheat your oven to 275°F (135°C).

Step 2

Pat the beef chuck roast dry with paper towels to help it brown better.

Step 3

Rub the roast all over with olive oil, then season generously with salt, black pepper, garlic powder, onion powder, and dried thyme.
