Ingredients

  • 2 medium Eggplant
  • 3 tablespoons Tahini (sesame paste)
  • 2 tablespoons Lemon juice
  • 2 large Garlic cloves
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Ground cumin
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Smoked paprika (optional, for garnish)
  • 1 tablespoon Fresh parsley (optional, for garnish)
  • 2 tablespoons Pomegranate seeds (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Prick the eggplants all over with a fork to prevent them from bursting in the oven.

Step 3

Place the eggplants on a baking sheet lined with parchment paper and roast in the oven for 35-40 minutes, turning them halfway through, until they are very tender and the skin is charred.

Step 4

Remove the eggplants from the oven and allow them to cool for 10-15 minutes.

Step 5

Once cool enough to handle, cut the eggplants in half lengthwise. Scoop out the flesh with a spoon and place it in a colander to drain excess liquid for about 5 minutes.

Step 6

In a food processor or blender, combine the eggplant flesh, tahini, lemon juice, garlic, olive oil, cumin, and salt. Blend until smooth and creamy. Taste and adjust seasonings if necessary.

Step 7

Transfer the baba ghanouj to a serving bowl. Drizzle with a little extra olive oil and garnish with smoked paprika, chopped parsley, and pomegranate seeds if desired.
