  • 2 pounds Yukon Gold potatoes
  • 1 teaspoon Salt
  • 2 medium, diced Carrots
  • 2 medium, diced Celery stalks
  • 5 small, thinly sliced Radishes
  • 1 medium, diced English cucumber
  • 4 chopped Green onions
  • 2 tablespoons, chopped Fresh dill
  • 2 tablespoons, chopped Fresh parsley
  • 0.5 cup Mayonnaise
  • 0.5 cup Greek yogurt
  • 2 tablespoons Lemon juice
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Paprika

Directions

Step 1

Wash the Yukon Gold potatoes and peel them if desired. Cut them into 1-inch chunks and place them in a large pot of cold, salted water.

Step 2

Bring the pot of water to a boil over medium-high heat. Reduce the heat to a simmer and cook the potatoes for 12-15 minutes, or until you can easily pierce them with a fork.

While the potatoes are cooking, prepare the vegetables. Dice the carrots, celery, and cucumber, thinly slice the radishes, and chop the green onions, dill, and parsley. Set everything aside.
