Ingredients

  • 1 15-ounce can Canned kidney beans, rinsed and drained
  • 2 cups Chicken broth
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced
  • 1 tablespoon Olive oil
  • 2 teaspoons Ground cumin
  • 2 teaspoons Paprika
  • 1.5 tablespoons Chili powder
  • 1 teaspoon Oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Shredded cheddar cheese (optional, for serving)
  • 0.5 cup Sour cream (optional, for serving)
  • 2 stalks Green onions, sliced (optional, for garnish)

Directions

Step 1

In a large skillet over medium-high heat, add olive oil and sauté the diced onion until soft, about 3-4 minutes. Add the minced garlic and cook for another 1-2 minutes.
