Ingredients

  • 4 pieces Chicken thighs or drumsticks (bone-in, skin-on)
  • 4 large Garlic cloves
  • 3 pieces Cilantro roots or stems
  • 1 stalk Lemongrass stalks (outer layer removed, minced)
  • 1 teaspoon Black peppercorns
  • 2 tablespoons Palm sugar or brown sugar
  • 2 tablespoons Soy sauce
  • 2 tablespoons Oyster sauce
  • 1 tablespoon Fish sauce
  • 2 tablespoons Vegetable oil
  • 1 tablespoon Lime juice

Directions

Step 1

In a mortar and pestle (or food processor), combine garlic cloves, cilantro roots or stems, lemongrass, and black peppercorns. Pound or blend into a rough paste.

Transfer the paste to a large mixing bowl. Add palm sugar, soy sauce, oyster sauce, fish sauce, vegetable oil, and lime juice. Mix well to create the marinade.

Place the chicken pieces into the bowl and thoroughly coat them with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight, to allow flavors to develop.
