Ingredients

  • 400 grams penne pasta
  • 2 boneless chicken breasts
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 red onion, finely chopped
  • 1 cup mild mango chutney
  • 1 cup cream (heavy or double)
  • 1 cup chicken stock
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons parsley, chopped
  • 0.25 cup Parmesan cheese, grated (optional)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the penne pasta according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

Step 2

Cut the boneless chicken breasts into bite-sized pieces and season with a pinch of salt and black pepper.

Step 3

In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for 5-6 minutes, stirring occasionally, until golden and fully cooked. Remove the chicken from the skillet and set aside.

In the same skillet, lower the heat to medium and add the minced garlic and chopped red onion. Sauté for 2-3 minutes until fragrant and softened.
