Ingredients

  • 2 slices Whole-grain bread
  • 0.5 whole Avocado
  • 2 large Eggs
  • 1 handful Fresh spinach leaves
  • 1 teaspoon Lemon juice
  • 1 tablespoon Butter
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 teaspoon Olive oil

Directions

Step 1

Toast the 2 slices of whole-grain bread until golden brown. Set aside.

Step 2

In a small bowl, mash 1/2 an avocado with 1 teaspoon of lemon juice, a pinch of salt, and black pepper to taste. Set aside.

Step 3

Crack 2 eggs into a small bowl, whisk until fully mixed, and season with a pinch of salt and black pepper.
