Ingredients

  • 2 cups all-purpose flour
  • 0.75 cups granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 0.5 teaspoons salt
  • 1 tablespoon orange zest
  • 0.5 cups freshly squeezed orange juice
  • 0.5 cups plain Greek yogurt
  • 0.25 cups unsalted butter, melted
  • 2 units large eggs
  • 1 teaspoons vanilla extract
  • 0.5 cups dried cranberries (optional)
  • 0.5 cups powdered sugar (for glaze, optional)
  • 1.5 tablespoons fresh orange juice (for glaze, optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners, or lightly grease the cups with non-stick spray.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Step 3

Add the orange zest to the dry mixture, and use your hands to gently rub the zest into the flour mixture to release its oils and enhance the citrus aroma.

In a separate medium bowl, whisk together the orange juice, Greek yogurt, melted butter, eggs, and vanilla extract until smooth.
