Ingredients

  • 2 cups all-purpose flour
  • 3 tablespoons sugar
  • 1 tablespoon baking powder
  • 0.25 teaspoons salt
  • 0.5 cups unsalted butter, cold and cubed
  • 1 tablespoon dried culinary lavender
  • 0.75 cups heavy cream
  • 1 large egg
  • 1.5 teaspoons vanilla extract
  • 0.5 cups powdered sugar
  • 2 tablespoons lemon juice
  • 1 teaspoons milk

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Step 3

Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs.

Step 4

Gently crush the dried lavender with your fingers or a mortar and pestle to release its aroma, then mix it into the dry ingredients.

Step 5

In a separate small bowl, whisk together the heavy cream, egg, and vanilla extract.

Step 6

Pour the wet ingredients into the dry ingredients and mix until just combined. Avoid overmixing as it can make the scones tough.

Step 7

Turn the dough out onto a floured surface and gently knead it a few times. Pat it into a 1-inch thick circle.

Step 8

Using a sharp knife or a bench scraper, cut the dough into 8 wedges, like a pie. Place the scones onto the prepared baking sheet, leaving some space between them.

Step 9

Bake in the preheated oven for 12-15 minutes, or until the scones are lightly golden on top. Remove from the oven and allow them to cool slightly on a wire rack.

Step 10

While the scones are cooling, prepare the glaze by mixing the powdered sugar, lemon juice, and milk in a small bowl until smooth.

Step 11

Drizzle the glaze over the slightly cooled scones, allowing it to set for a few minutes before serving.

Step 12

Serve warm or at room temperature alongside your favorite tea or coffee. Enjoy!
