Step 1: Place the cubed watermelon, granulated sugar, and lime juice into a blender. Blend until smooth.
Step 2: Pour the watermelon mixture into popsicle molds, filling each one about halfway. Tap molds gently to remove air bubbles. Freeze for 1 hour or until the surface is set.
Step 3: In a small bowl, whisk together the coconut milk and honey. Remove the frozen molds from the freezer and pour the coconut milk mixture on top of the watermelon layer, leaving room for another layer. Freeze for another hour until solid.
