Ingredients

  • 2 large (or about 12 ounces jarred, drained) roasted red peppers
  • 8 ounces (softened) cream cheese
  • 1 clove (minced) garlic
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon paprika
  • 0.5 teaspoons cumin
  • 0.25 teaspoons (optional, for heat) red chili flakes
  • 0.5 teaspoons (or to taste) salt
  • 0.25 teaspoons (freshly ground) black pepper
  • 2 tablespoons (chopped, for garnish) fresh parsley

Directions

Step 1

If using fresh red peppers, preheat your oven to 450°F (230°C). Place the peppers on a baking sheet and roast for 20-25 minutes, turning every 5 minutes, until the skin is charred and blistered. Once roasted, place them in a bowl, cover with plastic wrap, and let them steam for 10 minutes. Then peel off the skin, remove the stems, and discard seeds. Let the peppers cool.

Step 2

If using jarred roasted red peppers, drain them well and proceed to the next step.

Step 3

In a food processor, combine the roasted red peppers, softened cream cheese, minced garlic, olive oil, lemon juice, paprika, cumin, red chili flakes (if using), salt, and black pepper.

Step 4

Blend until smooth and creamy, stopping to scrape down the sides of the bowl if necessary. Taste and adjust seasoning as needed.

Step 5

Transfer the dip to a serving bowl and garnish with chopped fresh parsley.

Step 6

Serve immediately with pita chips, crackers, sliced veggies, or as a spread. Refrigerate any leftovers in an airtight container for up to 3 days.
