Ingredients

  • 2 Japanese cucumbers
  • 1 teaspoon Salt
  • 0.25 cup Rice vinegar
  • 2 tablespoons Sugar
  • 0.5 teaspoon Soy sauce
  • 1 tablespoon Toasted sesame seeds
  • 1 tablespoon Optional: wakame seaweed

Directions

Step 1

1. If using, soak the wakame seaweed in water for about 10 minutes to rehydrate. Drain well and set aside.

Step 2

2. Wash the Japanese cucumbers thoroughly. Slice them very thinly, about 1/8-inch thick. A mandoline slicer can be handy for this step.

Step 3

3. Place the cucumber slices in a bowl and sprinkle with salt. Toss gently to coat, then let sit for about 10 minutes. This helps draw out excess moisture, keeping the cucumbers crisp.

Step 4

4. After 10 minutes, rinse the cucumbers under cold water to remove the salt. Squeeze gently to remove excess water and pat dry with a paper towel.

Step 5

5. In a medium bowl, combine rice vinegar, sugar, and soy sauce. Stir until the sugar is dissolved.

Step 6

6. Add the cucumber slices and rehydrated wakame (if using) into the bowl with the dressing. Toss gently to combine and allow to marinate for at least 5 minutes.

Step 7

7. Before serving, sprinkle the salad with toasted sesame seeds for added flavor and texture.

Step 8

8. Serve immediately as a refreshing side dish.
