Ingredients

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 large red bell pepper
  • 1 small red onion
  • 0.25 cup fresh cilantro
  • 0.25 cup fresh parsley
  • 3 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 0.5 teaspoon ground cumin
  • 0.25 teaspoon chili powder
  • 0.25 cup toasted pumpkin seeds

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel and dice the sweet potatoes into 1-inch cubes. Place them on a baking sheet.

Step 3

Drizzle the sweet potatoes with 2 tablespoons of olive oil and sprinkle with 1 teaspoon of salt and 0.5 teaspoon of ground black pepper. Toss to coat evenly.

Step 4

Roast the sweet potatoes in the preheated oven for 20 minutes or until they are tender and lightly caramelized. Remove from oven and let cool slightly.
