Ingredients

  • 1 head Green cabbage
  • 1.5 cups Sauerkraut
  • 2 large Carrots
  • 1 medium Yellow onion
  • 3 cloves Garlic
  • 2 tablespoons Olive oil
  • 1 teaspoon Caraway seeds
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Lemon zest
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Remove the outer leaves of the cabbage, then cut it in half and remove the core. Thinly slice the cabbage into shreds.

Step 2

Peel and grate the carrots using a box grater or food processor. Set aside.

Step 3

Peel and finely chop the onion and garlic.

Step 4

Heat the olive oil in a large skillet or sauté pan over medium heat.

Step 5

Add the chopped onion and garlic to the pan. Cook, stirring frequently, for 3 minutes or until softened and fragrant.

Step 6

Sprinkle in the caraway seeds and smoked paprika, stirring to combine and toast the spices for 30 seconds.

Step 7

Add the shredded cabbage to the pan, stirring to coat it evenly with the oil and spices. Cook for 5 minutes, stirring occasionally.

Step 8

Stir in the grated carrots and sauerkraut, and season with salt and black pepper. Continue cooking for 7-10 minutes, until the cabbage is tender but still slightly crisp.

Step 9

Finish with a sprinkle of lemon zest for brightness, and adjust seasoning as needed.

Step 10

Garnish with freshly chopped parsley before serving.
