Ingredients

  • 500 g Frozen spinach
  • 200 g Feta cheese
  • 150 g Ricotta cheese
  • 2 pcs Eggs
  • 12 sheets Phyllo dough sheets
  • 100 g Butter (melted)
  • 2 tbsp Olive oil
  • 1 pc Onion (finely chopped)
  • 3 tbsp Fresh dill (chopped)
  • 3 tbsp Fresh parsley (chopped)
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Thaw the frozen spinach and squeeze out all excess water. Set aside.

Step 3

Heat olive oil in a pan over medium heat and sauté the chopped onion until soft and translucent, about 3-4 minutes. Remove from heat and let cool.

Step 4

In a large mixing bowl, combine the spinach, sautéed onion, crumbled feta cheese, ricotta cheese, chopped dill, chopped parsley, eggs, salt, and black pepper. Mix until fully combined.

Step 5

Brush a 9x13-inch (23x33 cm) baking dish with melted butter.

Place one sheet of phyllo dough in the dish and brush it lightly with melted butter. Repeat with 6 more sheets, brushing each layer with melted butter as you go.
