Ingredients

  • 0.5 cup unsalted butter
  • 1 cup semi-sweet chocolate chips
  • 0.75 cup brown sugar
  • 1 large ripe banana
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0.5 cup all-purpose flour
  • 0.5 cup old-fashioned oats
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon instant coffee granules
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.25 cup chopped walnuts or pecans (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish or line it with parchment paper.

Step 2

In a medium saucepan, melt the butter over low heat. Once melted, remove from heat and stir in the chocolate chips until smooth and combined. Let the mixture cool slightly.

Step 3

In a large mixing bowl, mash the ripe banana until smooth. Whisk in the egg, brown sugar, and vanilla extract until well combined.

Step 4

Slowly mix the cooled chocolate and butter mixture into the banana mixture, stirring until smooth.

Step 5

In a separate bowl, whisk together the flour, oats, cocoa powder, coffee granules, baking powder, and salt.

Step 6

Gradually fold the dry ingredients into the wet ingredients until just combined. If using nuts, gently fold them in now.

Step 7

Pour the batter into the prepared baking dish and spread it evenly. Smooth the top with a spatula.

Step 8

Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs.

Step 9

Allow the brownies to cool in the pan for at least 15 minutes before cutting into squares. Enjoy your breakfast brownies warm or at room temperature!
