Ingredients

  • 1 lb Ground beef
  • 1 tbsp Olive oil
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic cloves, minced
  • 1 tsp Chili powder
  • 1 tsp Ground cumin
  • 0.5 tsp Smoked paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Tomato paste
  • 0.5 cup Water or beef broth
  • 4 large Flour tortillas
  • 1.5 cups Shredded cheese blend (cheddar and Monterey Jack)
  • 0.5 cup Sour cream
  • 0.5 cup Salsa
  • 2 Green onions, sliced
  • 2 tbsp Fresh cilantro, chopped (optional)

Directions

Step 1

Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.

Step 2

Add the minced garlic and cook for another minute until fragrant.

Step 3

Add the ground beef to the skillet and cook, breaking it up with a spatula, until browned and fully cooked, about 8-10 minutes. Drain any excess grease if necessary.

Stir in the chili powder, ground cumin, smoked paprika, salt, and black pepper. Mix well to evenly coat the beef.

Add the tomato paste and water (or beef broth) to the skillet. Stir and let the mixture simmer for 3-5 minutes until slightly thickened. Remove from heat.

Preheat your oven to 375°F (190°C).
