Ingredients

  • 200 grams Granulated sugar
  • 120 ml Light corn syrup
  • 60 ml Water
  • 30 grams Unsalted butter
  • 150 grams Sunflower seeds (hulled and toasted)
  • 1 teaspoon Baking soda
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Flaky sea salt (optional, for garnish)

Directions

Step 1

Lightly grease a baking sheet or line it with parchment paper or a silicone baking mat. Set it aside.

Step 2

In a heavy-bottomed saucepan, combine the granulated sugar, corn syrup, and water. Stir gently until the sugar begins to dissolve.

Step 3

Place the saucepan over medium heat and bring the mixture to a boil without stirring. Allow it to cook until it turns a golden amber color, about 10-12 minutes. Use a candy thermometer, if available, and cook until the mixture reaches 150°C (300°F).

Step 4

Remove the saucepan from heat and quickly stir in the butter, toasted sunflower seeds, baking soda, and vanilla extract. Be careful, as the mixture will bubble vigorously.

Step 5

Pour the mixture onto the prepared baking sheet and spread it out into an even layer using a heatproof spatula. Work quickly before the brittle starts to harden.
