Ingredients

  • 1 cup Raw sunflower seeds
  • 2 medium Russet potatoes (peeled and diced)

  • 2 tablespoons Lemon juice
  • 2 tablespoons Fresh parsley leaves (chopped)
  • 1 tablespoon Fresh dill (chopped)
  • 1 medium Garlic clove (minced)
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 3 tablespoons Water
  • 2 tablespoons Nutritional yeast

Directions

Step 1

Place the raw sunflower seeds in a bowl and cover with boiling water. Let them soak for 15 minutes to soften.

Step 2

Meanwhile, peel and dice the potatoes into small chunks. Place them in a medium pot, cover with water, and bring to a boil. Cook for 10-12 minutes or until tender when pierced with a fork.

Drain the sunflower seeds and the cooked potatoes. Set aside to cool slightly.
