Ingredients

  • 500 grams fresh green beans
  • 50 grams raw sunflower seeds
  • 2 tablespoons olive oil
  • 2 pieces garlic cloves, minced
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper, freshly cracked

Directions

Step 1

Wash the green beans thoroughly and trim the ends.

Step 2

Bring a large pot of salted water to a boil. Add the green beans and blanch them for 2-3 minutes until they are bright green and crisp-tender. Immediately transfer the green beans to a bowl of ice water to stop the cooking process. Drain and set aside.

Step 3

Toast the sunflower seeds in a dry skillet over medium heat for 2-3 minutes, stirring frequently, until golden brown and fragrant. Remove from skillet and set aside.

Step 4

In the same skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Step 5

Add the drained green beans to the skillet and toss to coat them in the garlic-infused oil. Cook for 4-5 minutes, stirring occasionally, until the green beans are heated through.

Step 6

Stir in the lemon zest, lemon juice, salt, and black pepper. Mix well to evenly distribute the flavors.

Step 7

Remove the skillet from the heat and sprinkle the toasted sunflower seeds over the green beans.

Step 8

Transfer to a serving platter and enjoy warm as a side dish.
