Ingredients

  • 300 grams All-purpose flour
  • 200 grams Whole wheat flour
  • 100 grams Sunflower seeds
  • 50 grams Rolled oats
  • 50 grams Pumpkin seeds
  • 30 grams Ground flaxseeds
  • 7 grams Dry active yeast
  • 2 tablespoons Honey
  • 1.5 teaspoons Salt
  • 350 milliliters Warm water
  • 2 tablespoons Olive oil

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, whole wheat flour, rolled oats, sunflower seeds, pumpkin seeds, and ground flaxseeds. Stir well to distribute the dry ingredients evenly.

Step 2

Dissolve the dry active yeast in warm water (approximately 40°C) in a small bowl. Stir in the honey and let the mixture sit for 5–10 minutes until it becomes frothy.

Step 3

Make a well in the center of the dry ingredients and pour in the yeast mixture and olive oil. Stir with a wooden spoon or your hands until the dough starts to come together.

Step 4

Sprinkle salt over the dough and knead it on a lightly floured surface for about 8–10 minutes until it becomes smooth and elastic. Add a little more flour if the dough is too sticky.

Step 5

Lightly grease a clean bowl with olive oil, place the dough inside, and cover the bowl with a clean, damp kitchen towel. Allow the dough to rise in a warm place for 1–1.5 hours, or until it has doubled in size.

Step 6

Once the dough has risen, punch it down to release air and shape it into a loaf. Place the dough in a greased or parchment-lined loaf pan.

Step 7

Cover the loaf with a clean kitchen towel and let it rise again for 30–45 minutes until it has slightly puffed up.

Step 8

Preheat the oven to 190°C (375°F). Optionally, sprinkle additional sunflower seeds or oats on top of the loaf for garnish.

Step 9

Bake the bread in the preheated oven for 35–40 minutes or until the top is golden brown and the loaf sounds hollow when tapped.

Step 10

Remove the bread from the oven and allow it to cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing.
