Ingredients

  • 4 medium yellow squash
  • 1 large onion
  • 3 tablespoons olive oil
  • 2 garlic cloves
  • 2 tablespoons butter
  • 1 cup panko breadcrumbs
  • 0.5 cup parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon optional: red pepper flakes

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Wash and dry the yellow squash. Slice them into thin rounds, about 1/4 inch thick.

Step 3

Peel and slice the onion into thin strips.

Step 4

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onion and sauté for 5–7 minutes, stirring occasionally, until softened and slightly caramelized.

Mince the garlic cloves and add them to the skillet. Sauté for another 1–2 minutes until fragrant.
