  • 3 cloves garlic cloves, minced
  • 1 pound ground beef
  • 28 ounces (1 can) diced tomatoes
  • 2 tablespoons tomato paste
  • 15 ounces (1 can) kidney beans, drained and rinsed
  • 15 ounces (1 can) black beans, drained and rinsed
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 whole bay leaf
  • 2 tablespoons fresh cilantro, chopped (for garnish)
  • 0.25 cup sour cream (optional, for serving)
  • 0.5 cup shredded cheddar cheese (optional, for serving)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion and green bell pepper to the pot and sauté for 5-7 minutes until softened.

Step 3

Stir in the minced garlic and cook for an additional 1-2 minutes, being careful not to let it burn.

Step 4

Add the ground beef to the pot and cook until browned, breaking it up with a wooden spoon as it cooks.

Step 5

Drain any excess grease from the pot, if necessary.

Step 6

Stir in the diced tomatoes, tomato paste, kidney beans, black beans, and beef broth.

Step 7

Add the chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper, salt, black pepper, and bay leaf to the pot. Stir well to combine.

Step 8

Bring the chili to a gentle boil over medium-high heat, then reduce the heat to low.

Step 9

Cover the pot and let the chili simmer for 45 minutes, stirring occasionally to prevent sticking.

Step 10

Taste and adjust seasoning, if needed. Remove the bay leaf before serving.

Step 11

Ladle the chili into bowls and garnish with chopped cilantro. Optionally, top with sour cream and shredded cheddar cheese.
