Ingredients

  • 3 cups cooked and chilled jasmine rice
  • 2 tablespoons vegetable oil
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup frozen peas
  • 3 stalks scallions, sliced
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 0.25 teaspoon white pepper
  • 1 cup cooked diced chicken, shrimp, or tofu (optional)

Directions

Step 1

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.

Crack the eggs into the hot pan and scramble until fully cooked. Remove and set aside.

In the same pan, add the remaining 1 tablespoon of vegetable oil. Sauté the garlic until fragrant, about 30 seconds.
