Ingredients

  • 300 grams Penne pasta
  • 100 grams Sun-dried tomatoes (packed in oil)
  • 200 grams Cherry tomatoes
  • 100 grams Black olives (pitted)
  • 2 cups Baby spinach
  • 0.5 medium Red onion
  • 75 grams Feta cheese (crumbled)
  • 4 tablespoons Extra virgin olive oil
  • 2 tablespoons Red wine vinegar
  • 2 Garlic cloves (minced)
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil and cook the penne pasta according to the package instructions until al dente, about 9-11 minutes. Drain and rinse under cold water. Set aside to cool completely.

Step 2

While the pasta is cooking, chop the sun-dried tomatoes into small bite-sized pieces. Slice the cherry tomatoes in halves, cut the black olives into halves, and finely slice the red onion.
