Ingredients

  • 2 pieces large eggs
  • 2 tablespoons skim milk
  • 2 tablespoons sun-dried tomatoes (packed in oil, drained and chopped)
  • 1 cup fresh spinach leaves
  • 1 tablespoon feta cheese, crumbled
  • 1 teaspoon olive oil or nonstick spray
  • 1 pinch salt
  • 1 pinch black pepper

Directions

Step 1

Crack the eggs into a mixing bowl and whisk together with the skim milk, salt, and pepper until the mixture is smooth and slightly frothy.

Step 2

Heat a nonstick skillet over medium heat. Add the olive oil or coat with nonstick spray.

Step 3

Add the fresh spinach leaves to the skillet and sauté for 1-2 minutes until wilted. Remove the spinach and set aside.

Step 4

Reduce the heat to medium-low. Pour the egg mixture into the skillet, tilting the pan slightly to ensure the eggs spread evenly.

Step 5

Let the eggs cook for 1-2 minutes, or until the edges begin to set but the top is still slightly runny.

Step 6

Evenly sprinkle the sun-dried tomatoes, cooked spinach, and feta cheese over one half of the omelet.

Step 7

Using a spatula, carefully fold the bare half of the omelet over the filling. Press gently to seal.

Step 8

Cook for another 1-2 minutes, then slide the omelet onto a plate. Serve immediately and enjoy!
