Ingredients

  • 1 cup sun-dried tomatoes (packed in oil)
  • 0.25 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 fresh garlic cloves
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup water

Directions

Step 1

Prepare your food processor and attach the standard chopping blade.

Step 2

Drain the sun-dried tomatoes of excess oil, but do not rinse. Measure 1 cup of the drained tomatoes and add them to the food processor.

Peel the garlic cloves and add them to the food processor.

Step 4

Measure out the olive oil, red wine vinegar, honey, Dijon mustard, salt, and black pepper. Add all these ingredients to the food processor.

Secure the lid and pulse the mixture several times to roughly chop the tomatoes and garlic.
