Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon granulated sugar
  • 0.5 teaspoons salt
  • 0.5 cup unsalted butter, cold and cubed
  • 0.75 cup buttermilk, chilled
  • 0.5 cup sun-dried tomatoes, finely chopped
  • 0.25 cup shredded Parmesan cheese
  • 2 tablespoons fresh parsley, finely chopped (optional)

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.

Step 3

Add the cold, cubed butter into the dry ingredients. Use a pastry cutter or your fingertips to work the butter into the mixture until it resembles coarse crumbs.

Step 4

Stir in the chopped sun-dried tomatoes, Parmesan cheese, and fresh parsley (if using).

Step 5

Make a well in the center of the mixture and pour in the chilled buttermilk. Gently stir until the dough just comes together. Be careful not to overmix.

Step 6

Turn the dough out onto a floured surface and gently knead it a few times to bring it together. Pat the dough into a 1-inch thick circle or rectangle.

Step 7

Use a 2-inch biscuit cutter to cut out rounds of dough and place them on the prepared baking sheet. Gather any scraps, re-roll, and cut out more biscuits as needed.

Step 8

Bake the biscuits in the preheated oven for 12-15 minutes, or until they are golden brown on top.

Step 9

Remove the biscuits from the oven and let them cool slightly on a wire rack. Serve warm and enjoy!
