Ingredients

  • 8 oz Goat cheese
  • 1 cup Sun-dried tomatoes (packed in oil)
  • 1 cup Marinated artichoke hearts
  • 1 clove Garlic
  • 2 tbsp Olive oil
  • 2 tbsp Fresh parsley (chopped)
  • 0.25 tsp Salt
  • 0.25 tsp Black pepper
  • 1 tbsp Fresh lemon juice

Directions

Step 1

Place the goat cheese in a mixing bowl and allow it to come to room temperature for about 10 minutes to soften.

Step 2

Drain the sun-dried tomatoes and chop them into small pieces. Reserve 1-2 teaspoons of the oil from the jar.

Step 3

Drain the marinated artichoke hearts and chop them into small pieces.

Step 4

Mince the garlic clove finely or use a garlic press.

Step 5

Add the chopped sun-dried tomatoes, artichoke hearts, minced garlic, olive oil, chopped parsley, salt, and black pepper to the bowl with the goat cheese.

Step 6

Add the fresh lemon juice and the reserved oil from the sun-dried tomatoes to the mixture.

Step 7

Using a fork or a spatula, thoroughly mix all the ingredients together until smooth and evenly incorporated.
