Ingredients

  • 1 cup Sun-dried tomatoes (packed in oil)
  • 4 cloves Roasted garlic
  • 8 ounces Cream cheese (softened)
  • 0.25 cup Greek yogurt (plain, unsweetened)
  • 2 tablespoons Olive oil
  • 2 teaspoons Lemon juice (freshly squeezed)
  • 2 tablespoons Fresh basil leaves (chopped)
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Drain the sun-dried tomatoes from their oil, reserving about 1 tablespoon of the oil, and set aside.

Step 2

In a food processor, add the sun-dried tomatoes, roasted garlic cloves, softened cream cheese, and Greek yogurt.

Step 3

Blend the ingredients together until smooth, stopping to scrape down the sides of the processor as needed.

Step 4

Add the reserved tablespoon of oil from the sun-dried tomatoes, olive oil, lemon juice, fresh basil, salt, and black pepper.

Blend again until all the ingredients are fully incorporated and the mixture is creamy. Taste and adjust salt or seasoning if needed.
