Ingredients

  • 300 grams pasta (fusilli or penne)
  • 100 grams sun-dried tomatoes (packed in oil, drained and sliced)
  • 150 grams cherry tomatoes (halved)
  • 1 large cucumber (diced)
  • 1 medium red bell pepper (diced)
  • 0.5 medium red onion (thinly sliced)
  • 50 grams black olives (pitted and sliced)
  • 100 grams feta cheese (crumbled)
  • 20 grams fresh basil leaves (chopped)
  • 60 ml olive oil (extra virgin)
  • 30 ml lemon juice (freshly squeezed)
  • 2 pieces garlic cloves (minced)
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper (freshly ground)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Drain and rinse under cold water to cool it down quickly. Set aside.

Step 2

In a small mixing bowl, whisk together olive oil, lemon juice, minced garlic, dijon mustard, honey, salt, and black pepper to create the dressing. Set aside.

Step 3
