  • 2 cups Rolled oats
  • 1 cup Almond flour
  • 0.5 cup Honey
  • 0.5 cup Peanut butter (or almond butter)
  • 3 tablespoons Coconut oil
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Cinnamon
  • 0.25 teaspoon Salt
  • 0.5 cup Chopped dried apricots
  • 0.5 cup Chopped dried cranberries
  • 0.25 cup Sunflower seeds
  • 0.25 cup Chopped almonds

Directions

Step 1

Preheat your oven to 325°F (160°C). Line an 8x8-inch baking pan with parchment paper, allowing some overhang for easy removal later.

Step 2

In a large mixing bowl, combine the rolled oats, almond flour, cinnamon, salt, chopped dried apricots, chopped dried cranberries, sunflower seeds, and chopped almonds. Stir well to ensure the dry ingredients are evenly distributed.

Step 3

In a small saucepan over low heat, combine the honey, peanut butter, and coconut oil. Stir constantly until the mixture is smooth and well blended. Remove from heat and stir in vanilla extract.

Pour the wet mixture into the bowl with the dry ingredients. Using a spatula, carefully fold the mixture until all the ingredients are well-coated and combined.
