Ingredients

  • 1 cup Rolled oats
  • 8 Medjool dates, pitted
  • 0.5 cup Dried apricots
  • 0.25 cup Raw almonds
  • 0.33 cup Shredded unsweetened coconut
  • 1 teaspoon Turmeric powder
  • 2 tablespoons Honey (or maple syrup for vegan option)
  • 1 teaspoon Fresh orange zest
  • 0.125 teaspoon Salt

Directions

Step 1

Add the rolled oats, pitted Medjool dates, dried apricots, raw almonds, shredded coconut, turmeric powder, orange zest, salt, and honey (or maple syrup) into a food processor.

Step 2

Pulse the mixture several times to break down the ingredients, then process until the mixture is well-combined and sticky. Scrape down the sides of the food processor as needed.

Step 3

Check the consistency by pinching a small amount of the mixture between your fingers. It should hold together. If it’s too dry, add a teaspoon of water or more honey/maple syrup and blend again.

Step 4

Using a tablespoon or small cookie scoop, portion out the mixture and roll it into small, bite-sized balls with your hands.

Step 5

For an optional touch, roll each ball in extra shredded coconut or a dusting of turmeric for added color and texture.

Step 6

Place the Sun Balls on a plate or baking sheet, and refrigerate them for at least 30 minutes to firm up.

Step 7

Store the Sun Balls in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 1 month.
