Ingredients

  • 2 cups Whole wheat flour
  • 0.5 cups All-purpose flour
  • 0.5 cups Rolled oats
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoons Salt
  • 0.25 cups Brown sugar
  • 0.25 cups Cold unsalted butter
  • 1.5 cups Chopped fresh rhubarb
  • 0.75 cups Plain Greek yogurt
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Honey
  • 2 tablespoons Optional coarse sugar for topping

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the whole wheat flour, all-purpose flour, rolled oats, baking powder, baking soda, cinnamon, salt, and brown sugar. Stir well to evenly distribute the dry ingredients.

Step 3

Cut the cold butter into small, pea-sized cubes and add it to the dry ingredients. Use a pastry cutter or your fingers to blend the butter into the flour mixture until it resembles coarse crumbs.

Step 4

Gently fold in the chopped rhubarb, making sure it is evenly distributed throughout the mixture.

Step 5

In a separate bowl, whisk together the Greek yogurt, egg, vanilla extract, and honey until smooth.

Step 6

Pour the wet ingredients into the dry mixture and stir just until combined. Be careful not to overmix; the dough should be slightly sticky but manageable.

Step 7

Lightly flour a clean surface and turn the dough out onto it. Gently pat it into an 8-inch circle, about 1-inch thick.

Step 8

Using a sharp knife or bench scraper, cut the circle into 8 equal wedges. Place the wedges onto the prepared baking sheet, leaving some space between them.

Step 9

If desired, sprinkle the tops of the scones with coarse sugar for a touch of sweetness and a crunchy finish.

Step 10

Bake in the preheated oven for 12-15 minutes, or until the scones are golden brown and cooked through.

Step 11

Allow the scones to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool slightly. Serve warm or at room temperature!
