Ingredients

  • 2 medium Green bell peppers

  • 3 tablespoons Lime juice
  • 3 tablespoons Extra-virgin olive oil
  • 1.5 cups Cold water
  • 1.5 teaspoons Sea salt
  • 0.5 teaspoons Freshly ground black pepper
  • 0.5 cup Crusty bread or croutons (optional, for garnish)
  • 0.25 cup Sliced radish (optional, for garnish)

Directions

Step 1

Wash and roughly chop the cucumbers, green bell peppers, and avocado. No need to peel the cucumbers if they are seedless. Set aside.

Step 2

Wash and remove the stems from the fresh spinach, cilantro, and parsley.

Step 3

Peel the garlic cloves and roughly chop the jalapeño, removing the seeds if you prefer a milder gazpacho.

In a large blender or food processor, combine the chopped cucumbers, green bell peppers, avocado, spinach, cilantro, parsley, garlic, and jalapeño.
