Ingredients

  • 1.5 cups Brown rice
  • 3 cups Water
  • 0.5 teaspoons Salt
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 0.5 cup Red bell pepper, diced
  • 0.25 cup Red onion, finely diced
  • 0.25 cup Fresh parsley, chopped
  • 2 tablespoons Fresh mint, chopped
  • 2 tablespoons Fresh basil, chopped
  • 3 tablespoons Olive oil
  • 3 tablespoons Lemon juice
  • 1 teaspoon Honey or maple syrup
  • 0.25 teaspoons Ground black pepper
  • 0.5 cup Feta cheese, crumbled (optional)

Directions

Step 1

Rinse the brown rice under cold running water to remove excess starch.

Step 2

In a medium saucepan, bring 3 cups of water to a boil. Add the brown rice and 1/2 teaspoon of salt. Reduce the heat to low, cover, and simmer for 30 minutes, or until the rice is tender and the water is absorbed.

Step 3

Once the rice is cooked, remove it from the heat and let it sit, covered, for 10 minutes. Then fluff the rice with a fork and allow it to cool to room temperature.

While the rice cools, prepare the vegetables and herbs. Halve the cherry tomatoes, dice the cucumber and red bell pepper, and finely dice the red onion. Chop the parsley, mint, and basil.
