Ingredients

  • 12 oz pasta (spaghetti or linguine)
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 2 medium zucchini, thinly sliced into half-moons
  • 1.5 cups cherry tomatoes, halved
  • 2 cups baby spinach
  • 0.5 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup fresh basil leaves, chopped
  • 1 tsp dried oregano
  • 0.5 tsp red pepper flakes
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp lemon juice

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Add the sliced zucchini to the skillet and cook for 3-4 minutes, stirring occasionally, until tender and slightly golden.
