Directions

Step 1

Preheat your grill to medium heat or your oven to 400°F (200°C).

Cut the zucchini and yellow squash into 1/4-inch thick rounds. Core and seed the bell peppers, then slice them into thin strips. Peel the red onion and cut it into thin wedges.
